How to prepare pifa

Pifa or Pixbae is the fruit from a palm (Peach palm, Bactris gasipaes) native to Central and South America. It is sold on the streets of Panama as a savory snack. Here is how to cook the fruit.

 

 

 

The skin of the fruit is cut to let the salt water in during cooking. Then the fruit is boiled in salty water for about 40 minutes and then peeled and eaten.
